Celebrating Kris!


Yesterday was Kris' birthday! The kids and I were excited to celebrate such a great husband/daddy. Kris and I went to see Harry Potter the night before (for our anniversary), so his big day did not entail too many great or exciting plans. However, we kept with our tradition and celebrated lunch with a few friends at our our house. The tradition includes Kris choosing the lunch menu - I'll make whatever he wants ;) The kids love this - always putting in their suggestions.

Birthday Lunch Menu
Shrimp Lasagna (A dish my mom makes that we LOVE - rumors hace it that my brother requested the same meal for his birthday a few weeks ago! The link takes you to a similar recipe I found online.)
Spinach Salad
Sister Schubert Rolls

I did not take any pictures of his special day, but I thought I'd share two of the recipes with you. Both are DEE-LISH!



12 oz. Angel Hair Pasta
15 oz. jar Chunky Salsa
1 lb. bag Shrimp (frozen, tiny)
8 oz. Mozzarella

Mix:
2 large Eggs
1 cup Evaporated Milk
1 cup Yogurt (plain)
8 oz. Feta Cheese (crumbled)
8 oz. Swiss Cheese
1 tsp. Parsley
1 tsp. Basil
1 tsp. Oregano
2 tsp. Garlic (minced)

Spray 9x13 pan with Pam.

Layer from bottom to top:
1/2 of Pasta
Salsa
1/2 of Shrimp
Remaining Pasta
Yogurt Mixture
Remaining Shrimp
Mozzarella

2 bags Pepperidge Farms Chessman Cookies
6 to 8 Bananas (sliced)
2 cups Milk
5 oz. box Instant French Vanilla Pudding
8 oz. Cream Cheese (softened)
14 oz. Sweetened Condensed Milk
12 oz. Cool Whip

Line the bottom of a 9x13 dish with Chessman Cookies. Layer bananas on top. In a bowl, combine the milk and pudding mix and blend well. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the cool whip into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

Like Father, Like Son

It didn't take long after Bankston Hays was born for family and friends to start exclaiming how much he favored Kris.


As his personality has developed, we have found them to share more than just blue eyes, hair color, and cow licks. They have similar facial expressions


and mannerisms!



These last two pictures were taken a few weeks ago while watching TV. I couldn't help but smile seeing father and son enjoying an afternoon the exact same way!

Gettin' in the groove

We are slowly getting in the groove now that our lives are back in a routine. The kids and I enjoyed scheming ways to "welcome Daddy home" and decided on the idea of having balloons all over the floor (where he would enter) and having a "welcome home" sign.

I took these pictures of them with their creation right before they went to bed. Being a school night they couldn't wait up on his arrival. Sorry for the poor quality - taken with my phone (Kris took our camera with him).


The more we talked about it the plans grew a little :) Wes got his class in on the excitement - having them sign the poster! It was cute...his friends had drawn little pictures and signed their names. He even added names of cousins and other relatives that he knew would want to sign the poster if they were here!


We have tackled the laundry and made a big grocery run. We have looked at pictures and listened to stories. And we have learned to play Chinese Checkers. Real life...here we come!

It's here! It's here!

Kris is on his way home as I type and I could not be more excited!!! He still has a little more than 7 hours left before touching US soil but he's getting closer :)

He has had a wonderful time visiting with old friends and making new friends, experiencing a new culture, and seeing THE need around the world. I am really glad he was able to go - just sad we all weren't. It is definitely a perk with his job!


Hopefully the wait will pass quickly as today will be spent getting the house in order, doing laundry (to make way for his 2 weeks worth!!!), and running a few errands. After school the kids have ballet and basketball and then we have a little surprise to get ready for Daddy :)

Can't wait to have him home!!! Even if he is coming home with a beard...

FLASHBACK: HHS 20 year Reunion

In July the HHS Class of 1990 celebrated with a 20 year reunion. Of course I did not know Kris when he graduated from high school, but it is very hard to believe it has been that long! Several classmates got together and organized a family picnic for Saturday afternoon and a "mixer" for Saturday night.

The mascot's head was the centerpiece of the foyer table. I thought that was a cool idea!


My class has not quite made it to the 20 year mark, but a 10 year never got planned. So, I was pretty impressed with all the memorabilia taking you back to the good old days :) Of course the tiger was great, but they also decorated with old play bills, team rosters, awards - all in purple and gold!

I thought everything about the event was great. The food was good...

reconnecting with old faces was fun...

and fellowship with good friends now spread all over the country made it a great evening all around!


On another note...but kinda along the same lines...Kris' mom brought this quilt to him a few weeks ago. She had taken a lot of his practice t-shirts, concert t-shirts, school play t-shirts, team jerseys, etc. from high school and had them made into a quilt. Don't you love it?

FLASHBACK: Kris turns 38!

Kris' birthday falls the day after our anniversary. We usually celebrate our anniversary in some way so Kris' birthday ends up being a little more low key. For the past couple of years I have cooked whatever Kris requested and had a few people over. This year we had steak, twice baked potatoes, and steamed broccoli. It was so good.

He is such a good daddy!


We also enjoy singing "Happy Birthday" to him and letting him blow out a candle :) I rarely make a traditional birthday cake for the celebration. Over the years we have had red velvet cake, ice cream cakes, and even blueberry pound cake. But this year we put a candle in Peanut Butter Cup Cheesecake!



This was absolutely delicious! Everyone gave it a thumbs up!


Applebee's Reeses' Peanut Butter Cup Cheeesecake

(recipe found at cdkitchen.com)

CRUST
2 cups chocolate cookie crumbs - (more if needed)
1 cup roasted unsalted peanuts -- coarsely chopped
1/2 cup unsalted butter -- melted
4 tablespoons golden brown sugar - (firmly packed)
1 pinch salt

FILLING
4 packages cream cheese - (8 oz ea) -- room temperature
1 1/2 cup golden brown sugar - (firmly packed)
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
4 large eggs
1/4 cup whipping cream
2 1/2 cups Reese's Peanut Butter Cups in 3/4" pieces

TOPPING
1 bag semi-sweet chocolate chips - (12 oz)
4 tablespoons unsalted butter
1/4 cup water

DIRECTIONS
For Crust:
Position rack in center of oven and preheat to 350 degrees. Butter 9-inch spring form pan. Mix chocolate cookie crumbs, chopped peanuts, melted butter, brown sugar and pinch of salt in bowl until well combined. Press mixture evenly onto bottom and sides of pan. Bake until set, about 8 minutes. Set aside to cool. Reduce oven to 325 degrees.

For Filling:
Using electric mixer, beat cream cheese and brown sugar in large bowl until smooth. Add peanut butter and vanilla extract and beat just until blended. Add eggs 1 at a time, beating just until blended after each addition. Add whipping cream and beat until smooth. Stir in peanut butter cup pieces. Pour filling into crust. Bake until sides of cake are set, but center still moves slightly, about 55 minutes. Cool cake in pan.

For Topping:
Place all ingredients in microwavable bowl and heat at 50% power for 30 seconds. Stir. Continue to heat at 10 second intervals until chocolate is barely melted. Do Not Overheat. Stir until smooth and pour over top of cheesecake, spreading chocolate to edges.

Cover and refrigerate overnight.

Marrying That Man

I probably don't have to mention I was just a little excited for August 8, 1998!

The day had arrived and was packed full from the excitement of getting ready and taking pictures. Everything was coming together and my joy was overflowing! The bagpipes began welcoming our friends and family and eleven o'clock was drawing near. The moment came for my brother to walk me down the aisle and as I turned the corner my first sight was Kris waiting for me in his tux. Looking in his eyes for the first time that day made that aisle feel a mile long. I couldn't get to Kris fast enough :)


The ceremony was relatively short and sweet. I posted earlier about Kris' close friend marrying us. My sister served as my maid of honor and Kris' dad served him as best man. Several other close friends participated in meaningful ways and completed such a special day. Boy, was I excited to be pronounced Mr. and Mrs.!!!!


After having the time of our life at the reception it was time to change clothes and be on our way. We said our goodbyes and ran out to our Honda Civic and hit the road.

Kris planned our honeymoon as a complete surprise. He did a super job keeping it a secret. He picked the place and made the arrangements without me knowing a thing! A few days before the wedding he gave me a homemade card giving me clues about what to pack. We could have gone anywhere and I would have been happy - but not knowing made the trip even more thrilling! We made our way to the airport, boarded the plane, and started our journey...


I still had no clue where we were headed as we landed for a layover in Minneapolis-St. Paul (per my request!). We boarded our next flight and landed in Kalispell, Montana - Kris had planned a trip to Glacier National Park!

We stayed at A Wild Rose bed and breakfast. It was such a nice place!


Our trip included:
  • hiking to incredible waterfalls and lakes
  • viewing the most gorgeous starlit sky
  • touring the campus of The University of Montana
  • walking around the town of White Fish
  • mountain biking the trails of Big Sky
  • white water rafting the Flathead River








We had the BEST time!

Meeting the Man of My Dreams

As I was about to post a FLASHBACK about our 12th anniversary, I decided it might be fun to document how Kris and I met. To make it even more fun - my mom recently passed her extra scanner/printer combo down to me and it offered the opportunity to bust out some old pictures of our "early days"! Most of you who follow our blog are well aware of this story, but for the record...

My life was at a turning point leading up to the summer of 1995. I was finishing up my sophomore year of college and trying to decide what was next. Due to God re-directing me and some family issues, I knew He had me at a pivotal point. The decisions He was calling me to make were life altering. I had to decide - was I willing to follow Him (trust the unknown, abandon all that I thought was safe, normal, right) or was I just going to remain comfortable (I knew He had brought me to this Christian college and given me great friends, why mess up a good thing)? I often wondered what in the world I was doing and what in the world people would be thinking. Why was I leaving something so good for something so unsure?

I had spent the last few months agonizing over the decision. I fought feelings of letting people down, leaving my friends, wondering if I was wrong, and even entertaining whether or not it really was God calling me. But, in the innermost part of my soul, I knew. I had to follow. It may not be easy. It may not feel good. It may not seem better. But He said do it...that alone was enough.

Before long I found myself in a staff meeting having orientation for a summer that would change my life. I was hired to work as a lifeguard at the Gulf Coast camp where I visited each summer of my junior high years. I moved in the staff house knowing little more than one other staffer and how to "reach, throw, don't go"!

A few weeks into my summer I was headed to the Snack Shack and there...about 30 yards away...walking along the sidewalk on his way to the auditorium...was Kris.

I felt it from the top of my head to the tips of my toes.

It stopped me in my tracks.

It was the guy.

God was answering a longtime prayer of mine...that I would know.

Not know. But KNOW.

I had been praying earnestly for the last few years that He would show me who He had for me, and that He would show me in a way that I would know without a shadow of doubt.

He had answered.


That distance away I did not know this guy's name, I did not know this guy's heart, I did not know this guy. But, I did know God is faithful.

It was a little while before we actually met. And to say my knees were shaking would be an understatement!!! After that we would occasionally run into each other and share a few words, but honestly, I felt like I could not catch my breath when he was around :)

The summer rocked on and we both fulfilled our duties at camp. We found ourselves going about our lives. We returned to school (before meeting Kris I had already decided to transfer to Southern Miss - not knowing it was where he had spent his entire life) and did the college thing. He was a BSU intern and I was a student. We became friends but it would be a long two years before that changed!

We both served as Fuge camp staffers the summer of 1997 (at different campuses) and that is when our friendship deepened. We spent the summer writing letters and occasionally talking on the phone. We got to know each other and when we returned to school our relationship was different in a really, really good way :) As they say...the rest was history!

It was not long before our conversations started hinting of the future. He was considering seminary in Texas and we were looking at apartments online (s-l-o-w-l-y, as it was the dial-up age!), I was looking into possible job opportunities, and marriage was becoming a real possibility!

We met each others families and started making plans - that included each other.

I finished classes that December and completed my internship the following May with a ring on my finger.
